About the quality of our tuna

We select our tuna with consideration of the market price and with no gap between the value of the tuna and the price at which we buy it. We offer tuna at a price that is commensurate with the quality of the product. We place emphasis on the leanness of the tuna. (We select tuna with good quality, color, and freshness, with an emphasis on lean meat.) We purchase tuna with the aim of keeping the freshness and flavor of the tuna in mind.

When the tuna is ready to eat

When the tuna has stopped dripping, it is ready to eat. Depending on the product, the color of the tuna may begin to change at the edges before the dripping stops, in which case, eat it sooner. If this is the case, eat them sooner. Once the color has started to change, we recommend cooking or searing the tuna before eating. The standard expiration date is 2 days for raw sakimi, 2 days for sashimi without tsuma, and the same day (10 to 12 hours) for sashimi with tsuma.
